Angela's Energy Balls
INGREDIENTS:
1 1/2 cups oats
2/3 cups unsweetened coconut
1/2 cup peanut/almond or other nut butter
1/2 cup ground flaxseed or chia seeds
1/2 cup raisins/cranberries (or chocolate chips)
1/2 cup chopped dates
1/2 cup sunflower/pumpkin seeds and silvered almonds or walnuts
1/3 cup honey or molasses
1 tsp vanilla extract
1 scoop whey protein powder or 8 tbsp skim milk powder (OPTIONAL)
INSTRUCTIONS:
- Stir all ingredients together in medium bowl until thoroughly mixed
- Let chill in the refrigerator for half an hour
- Once chilled, roll into balls of about 1" in diameter
- Store in an airtight container and keep refrigerated for up to 1 week
- Makes 45-50 balls
